"Tri-tip is a cheaper, tougher cut, but it magically transforms as it braises low and slow in a broth that gets flavored with my secret ingredient: French onion soup mix," says Thiessen. "The deep, meaty flavor of the beef complements the sweetly caramelized root vegetables."

Spicy Pork Tenderloin with Fennel Stuffing

"Pork is one of my favorite meats to cook with when I want something that takes on other flavors really well. Pork tenderloin in particular has such great, tender texture and goes really nicely with just about any glaze or rub — or, in this case, both!"
