Dave's striped bass

Ingredients

  • 4 striped bass fillets, cleaned and deboned (bigger is better)
  • 2 cup large diced roma tomatoes
  • 1/2 cup diced fennel
  • 1/2 cup diced onion
  • 1/4 cup diced garlic
  • 1/4 cup fresh parsley
  • 2 tablespoon fresh oregano
  • 1/8 cup fresh thyme
  • 4 tablespoon butter
  • 1/2 cup olive oil

Preparation

Baking Directions:

Lay out 4 pieces of aluminum foil.

Place fillet in middle of each piece.

Divide the ingredients around the fish.

Cut butter into small pieces and place on the fish.

Pour the oil and lemon juice on the fish.

Add salt and pepper and slice of lemon.

Wrap each into a foil packet, making a good seal Bake or barbecue for 10-15 minutes, depending on the size of fillets, at 400 degrees.

Cook on medium-high.

Cut open the foil and check to see if it’s cooked.

Serve on a plate with vegetables and sauce on the fish.
