Need a light snack to tide you over before dinner? Pesto avo toast is the perfect thing!
Technique tip: The fresher the bread, the tastier the toast. Our favorite bread for toasting is sourdough.
Swap option: The avocado and pesto are great together, but mix things up even more with a light spread of hummus for some variation and extra protein.
Ingredients
- 2 large or 4 small slices of bread (we recommend a fresh sourdough)
- Fiery chili pesto
- 4 avocados, sliced
- A few cherry tomatoes, halved
- Juice of 1 lemon
- Cilantro for garnish
Preparation
Toast a slice of bread.
2.Spread on a heaping spoonful of fiery chili pesto.
3.Add the sliced avocado and a couple of halved cherry tomatoes to the toast.
4.Garnish with a squeeze of lemon juice and some chopped cilantro leaves.
