As much as I love Buffalo wings with blue cheese on the side, this sandwich delivers the whole package. You get the ease of eating a slider, avoid getting your fingers covered in sauce and all the great flavors of a classic wing. It's a win-win-win!

Ingredients

Blue Cheese Sauce
  • 2 cups blue cheese dressing
  • 3/4 tablespoon blue cheese crumbles
  • 1 cup finely diced celery
  • 1/2 cup mayo
Dry Dredge
  • 4 cups all-purpose flour
  • 2 cups cornstarch
  • 2 tablespoons cayenne pepper
  • 2 tablespoons onion powder
  • 2 tablespoons garlic powder
  • 2 tablespoons freshly ground black pepper
  • 2 tablespoons salt
  • 2 tablespoons dry mustard
Wet Dredge
  • 1 quart buttermilk
  • 1/4 cup hot sauce
  • 2 tablespoons freshly ground black pepper
  • 2 tablespoons salt
  • 2 tablespoons dry mustard
Chicken Tenders
  • 8 chicken tenders
  • oil, for frying
To Serve
  • Buffalo sauce, homemade or store-bought
  • toasted party-size potato rolls
  • tomato slices
  • green leaf lettuce

Preparation

For the blue cheese sauce:

Mix all ingredients together in a mixing bowl.

For the dry dredge:

In a shallow bowl, whisk together all the ingredients until well-combined.

For the wet dredge:

In a shallow bowl, whisk together all the ingredients until well-combined.

For the chicken tenders:

1.

Coat each tender in the wet dredge; gently shake off the excess. Coat the tenders in the dry dredge; shake off excess flour.

  Return the tenders to the wet mixture and then again to the dry mixture. Be sure to pack in the dry mixture and shake any excess flour off.

Heat oil in a heavy-bottomed pot over medium-high heat until it reaches 350 F.

Fry the tenders for about 5 minutes, until golden brown.

Remove to a paper towel-lined plate.

To serve:

1.

Coat the fried chicken in Buffalo sauce then place on top of the bottom buns.

2.

Top with sliced tomato and lettuce.

3.

Spread blue cheese sauce on the top buns. Close the sandwiches and serve.
