Chef notes

These snacks are perfect for that after-school crunch time when homework and activities are in full swing. They're not only packed with healthy ingredients that will keep kids (and grown-ups) energized and satisfied, but they're perfectly sweet and yummy!

(Created by TODAY with our sponsor, Smucker’s Natural Fruit Spread.)

Technique tip: Store in an airtight container and refrigerate for up to 1 week.

Swap option: You can experiment with different nut or seed butters, or use agave or honey instead of maple syrup, etc. Not a coconut fan? Skip it!

Ingredients

  • 1/2 cup natural peanut butter
  • 1/2 cup rolled oats
  • 1/4 cup chopped dates
  • 1/4 cup maple syrup
  • 1/4 cup chia seeds
  • 1/4 cup shredded unsweetened coconut
  • 2 tablespoons flax meal
  • 2 tablespoons cacao powder
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt

Preparation

Combine all ingredients in a bowl with a fitted mixer and mix until well incorporated.

Roll into 1-inch balls, place in an airtight container and refrigerate until ready to eat.
