Strawberry Gelato with Sambuca Affogato

Yield 1 pint

INGREDIENTS

Gelato base

  • 1 teaspoon powder gelatin
  • 1/2 cup cold water
  • 1 qt whole milk
  • 1/2 qt heavy cream
  • 6 tablespoons corn syrup
  • 2/3 cup dry milk
  • 1 1/3 cup granulated sugar

DIRECTIONS
Combine gelatin and water in a bowl. Set aside.

Combine milk, cream, corn syrup, dry milk, and sugar in a sauce pot and place over low flame. Heat until hot, but do not boil or even simmer mixture. Remove from heat.

Add gelatin (water and gelatin powder will have combined to form a think, jelly-like substance.)

Let mixture cool to room temperature. Add strawberry mixture (below).

Turn in ice cream machine.

Strawberry mixture

  • 1 pint strawberry puree, strained
  • Juice of 1 lemon
  • 1/8 cup granulated sugar
  • 1 teaspoon vanilla

DIRECTIONS
Mix ingredients well.

For the affogato, brew espresso in mocha pot, add 1 shot sambuca, pour over gelato.
