INGREDIENTS
Stock mix
- 1/2 cup chicken stock
- 1/2 large sweet onion
- 4 cloves garlic
- 1/2 bunch parsley, chopped
DIRECTIONS
Place ingredients in blender or food processor and puree.
Meatballs
- 1/2 cup ground beef
- 1/2 cup ground pork
- 1/2 cup ground veal
- 1/2 cup breadcrumbs
- 5 eggs
- 1/2 cup grated Parmigiano Reggiano cheese, grated
- 2-3 pinches chili flakes
- 2-3 pinches salt
DIRECTIONS
Combine all ingredients and mix with both hands until mixture is uniform. Do not over mix. With a little olive oil on hands, form 2 oz balls.
Heat extra virgin olive oil over medium-high heat in a large skillet (about 1/2 inch deep). Brown meatballs, turning once. Then simmer in tomato sauce and place over spaghetti if desired.
