Avocado Corn Relish

INGREDIENTS

  • 4 ears Queen Anne’s Corn, roasted
  • 6 avocado, diced
  • 1 red pepper, diced
  • 2 jalapeòos, diced
  • ½ red onion, diced
  • 2 lemons, juiced
  • 1 tbsp. olive oil
  • 1 tbsp. Kosher salt
  • 1 bunch cilantro, chopped

DIRECTIONS
Roast corn over a hot grill. Cut corn off cob and mix with remaining ingredients. Serve with chips or Indian flat bread.
