Ancho rub (for 4 steaks):

  • ½ cup brown sugar
  • 1 tablespoon sweet smoked paprika
  • 2 tablespoons ancho powder  
  • 1 tablespoon kosher salt    

Kona rub (for 4 steaks)

  • 1 teaspoon granulated sugar,
  • 1 teaspoon dry mustard
  • 3 tablespoons ground Kona Decaffeinated Coffee
  • 1 tablespoon finely grated Parmesan
  • 1 tablespoon freshly ground black pepper
  • 2 teaspoons kosher salt
  • Shallot butter
