The mad scientist strikes again! After shocking the TODAY anchors last year, YouTube star Nick Uhas returned to the plaza on Wednesday with more daring feats of science that blew our TODAY team away.

(Now is probably a good time for an important reminder: Do not try these at home!)

For starters, Dylan Dreyer got a surprise when she walked across a vat filled with a mixture of cornstarch and water. When pressure is applied to the mixture, it takes on the properties of a solid. It's not magic: It's science!

Next up: See how Matt Lauer reacted when his handful of bubbles was lit on fire. His face says it all!

And the classic Diet Coke-plus-Mentos experiment has nothing on Uhas' next mad experiment. Check out Carson Daly and Savannah Guthrie launching colorful foam several feet into the sky using just hydrogen peroxide and potassium iodide.

For his final feat, Nick made the plaza disappear into a cloud of smoke! With protective face shields in place (and wife Siri Daly standing nervously nearby), Carson showed everyone what happens when you pour warm water into liquid nitrogen.

Even after the smoke cleared, the anchors were left with their jaws on the plaza pavement. Nick, you've done it again!
