Not only are they delicious, but they're don’t require electricity or the stovetop, so you don't have to deal with hunger pain while trying to entertain yourself without power.

Assorted bean salad with tuna

Most people have canned beans and tuna fish sitting in their pantries, and they make an excellent salad option.

Mix garbanzos, white beans, black beans, red beans, or whatever you have in the pantry. Then rinse them under running water to get rid of sodium. Drain.

Do the same to tuna fish and then add it to the beans. You can also add scallions or onions, if you have them. To dress, use olive oil, vinegar or fresh lemon if you have it on hand. Add salt, pepper or cayenne if you prefer. Chop cilantro for garnish and add a few slices of jarred red peppers for color if you have them.

Yellow and green raw zucchini salad

Use a vegetable peeler to slice vegetables into ribbons, then dress with olive oil, vinegar and lemon. Sprinkle with parsley. Feel free to add carrots as well; they can be cut into ribbons.
