Simple Paella with Cauliflower “Rice”

Paella is a traditional Spanish dish that features lots of yellow rice, veggies, protein (seafood, chicken, sausage, and so on) and seasonings. I gave it a healthy spin by using “cauliflower rice,”” which drives down calories and carbs. In fact, my version contains less than 200 calories per two-cup serving.
