Baked ricotta with bruschetta

Ingredients

  • Ricotta

    • 6 tablespoons unsalted butter
    • 3 pounds whole-milk ricotta
    • 1 cup diced mozzarella cheese
    • 4 eggs
    • 10 ounces grated Parmesan cheese
    • Salt and pepper to taste
  • Bruschetta

    • 1 round loaf Italian bread
    • 1/2 cup olive oil
    • 2 cloves garlic, peeled and cut in half

    • 3 cups cauliflower florets

    • 1/4 stick salted butter

Ingredients

    • 1 whole 3-pound chicken, cut into 8 pieces, leaving the bones in and skin on
    • 1/2 cup flour
    • Salt and pepper to taste
    • 3/4 cup olive oil
    • 1 tablespoon chopped garlic
    • 1 cup chopped onion
    • 1 cup button mushrooms, halved
    • 2 cups diced red and yellow peppers
    • 1/4 cup red wine vinegar
    • 2 cups Italian plum tomatoes, chopped
    • 1 cup chicken or veal stock
    • 1/2 bunch fresh basil, chopped fine
