Ingredients

  • 1 pound perfectly fresh sea or bay scallops, cut into 1/4-inch dice
  • 1/2 cup peeled and minced bell pepper
  • 1 teaspoon minced lime zest
  • 1/4 cup freshly squeezed lime juice

Preparation

Baking Directions:

Toss together all ingredients except the cilantro and let sit at room temperature for 15 minutes.

2. Taste, adjust seasoning, and serve, garnished with the cilantro.
