The weather is getting cooler, the leaves are starting to change and Sunday Night Football season is in full swing. We're getting ready for this weekend's game with the next installment of our TODAY Food Loves Football series.

This week, chef Eddie Jackson is making Houston-inspired recipes for the Texans and chef Renee Kelly is preparing Kansas City-inspired dishes for the Chiefs.

Kelly is cooking up gooey, chocolaty grown-up s'mores and mouthwatering short rib sandwiches with coleslaw, while Jackson is preparing smoky tomatillo nachos with the works and barbecue rib filled tacos.

I love these sandwiches because they satisfy all my game-day cravings. They're packed with tender beef, tangy blue cheese, crunchy slaw and the flavor of refreshing sarsaparilla soda.

It's hard to improve on the classic flavors of traditional s'mores. But, making your own marshmallows, using warm chocolate chip cookies, sweet and salty bacon bits and a spiced ganache gives these an extra edge. I love to enjoy these with whiskey or Bourbon or an Irish coffee if it's cold out.
