Ingredients

  • 3 pound fish
  • 1 sprig rosemary
  • 1 sprig thyme
  • 1 sprig oregano
  • 1 sprig garlic
  • 2 sprig lemons
  • 2 sprig olive oil
  • 2 sprig sea salt
  • 2 sprig black pepper

Preparation

Baking Directions:

Stuff the fish cavity with rosemary, thyme, oregano, pieces of roasted garlic and lemon wedges.

Lightly score the outer flesh of the fish and drizzle with olive oil, dust with salt and pepper and grill for approximately 10 minutes on each side.

Serve with smashed yukon gold potatoes.
