It’s nearing March 24, which can only mean one thing — the TODAY Wedding is just around the corner!
If you haven’t heard, TODAY is throwing the ultimate wedding in honor of the March release of "My Big Fat Greek Wedding 2." We partnered with our sister company, Universal Pictures, to ensure that the lucky couple you chose — Kaitlin Roseman and John West — has the ceremony of a lifetime.

Sylvia Weinstock, the leading lady behind the custom cake company of the same name, is known by many as “The Queen of Cakes.” She’s baked for high-profile clients including Oprah Winfrey, Martha Stewart, the Kennedys and the Rockefellers, and fortunately for us, she offered to lend TODAY her skillful hand.
Weinstock created three gorgeous designs that she hopes “appeal to three different bridal fantasies.” She told TODAY over the phone that she designed the cakes with the elaborateness of the Rainbow Room (the location of the wedding) in mind. “We wanted to create something with a romantic edge,” Weinstock explained. “Something unusual and exciting.”

1. Lace
This design embodies elegance, refinement and beauty — evoking feelings of time-honored traditions. The four-tiered treat is a white cake with an apricot and cooking filling.
“This option is very romantic and feminine… with delicate flowers made of sugar,” Weinstock told TODAY. “It’s like the lace of a dress.” Brides now seek to replicate or "borrow" the pattern from their gown and recreate it on the cake.
2. Metallic
The gold leaves and beautifully-crafted white flowers add a regal edge to this wedding cake, and we love the intricate detail that provides a fresh touch of youthful energy. This shiny dessert is a yellow butter cake with lemon raspberry filling, and also happens to be Weinstock's favorite flavor.
“This one is art deco and exciting,” Weinstock told TODAY — a perfect match for the brilliance of the Rainbow Room. She said she encourages her brides to save a flower or leaf from the cake as a keepsake, adding that many ask her to reuse that flower on their son or daughter's wedding cake.

3. Floral
The last option is a breathtaking floral design, rich in vibrant, natural color. The trimmed tiers add a dash of delicacy and effortlessly complement the smoothness of the frosted layers. Weinstock wanted this cake to feature cherry blossoms, which she told TODAY are “very apropos for the month of March.”
The chocolate cake includes three different fillings: chocolate, caramel and vanilla. Weinstock said that she often finds the bride and groom have different taste palettes, so she fills the tiers with an assortment of flavors.
