I eat this most days for breakfast; it's light yet filling. I never buy flavored yogurt because I often find it to be way too sweet and tastes completely artificial to me. I prefer to sweeten and flavor it myself and it always tastes delicious! It's also a great way to make a brunch a bit more personalized because everyone can assemble their yogurt parfaits according to their preference.
Technique tip: Warm the honey slightly in a saucepan or microwave to help it loosen up so you can mix in easier.
Swap option: Feel free to use any toppings you like here; it's a great way to use leftover bits and pieces hanging in your pantry and fridge. I often use frozen berries as well, just allow them to thaw slightly and you're all set!
Ingredients
- 3½ cups plain Greek yogurt
- 1/4 cup good quality honey, or more to taste
- 2 teaspoons vanilla bean paste
- Toasted coconut, for topping
- Pomegranate seeds, for topping
Preparation
In a large bowl, mix together the yogurt with the honey and vanilla.
Place in a large shallow bowl and allow everyone to serve themselves with their desired toppings.
