Wheat-berry risotto



  • 3 ounce butter
  • 1 ounce small white onion diced
  • 2 clove garlic, minced
  • 3 cup farro
  • 1 cup white wine
  • 1 cup bay leaf
  • 6 cup warm chicken stock
  • 1/2 cup grated parmesan cheese
  • 1/2 cup mascarpone cheese
  • 1/4 cup chopped fresh herbs
  • Preparation

    Baking Directions:

    Sauté onion and garlic in the butter and a good pinch of salt for about 2 minutes, or until the onions are just softAdd farro; stir farro about 3 minutes.

    Add wine and simmer until absorbed, stirring occasionally, add 1 cup of warm chicken stock.

    Repeat this process until the farro is tender; to finish stir in the Parmesan cheese and mascarpone Adjust seasoning and serve topped with the herbs.
