The classic margarita is one of the ubiquitous cocktails in the world. Despite having no clear provenance, it has charmed drinkers since its introduction into popular culture. It's practically warm weather party mandated! And nothing proves its dominance more than the countless variations the Margarita has spawned. The spicy margarita is the variation that has taken hold and never let go. The perfectly balanced blend of sweet, sour and earthy flavors makes for a crowd-pleaser the world over.

Technique tip: To make black lime syrup at home, mix 1/2 teaspoon black lime powder, 1 capsule activated charcoal, 1 cup sugar and 1 cup water in a saucepan and heat over medium heat and stir until sugar is dissolved.

Swap option: Try Ghost Tequila if you're looking for a supremely spicy kick. It is a tequila made from infusing tequila with the infamous ghost peppers of India.

Ingredients

  • 2 ounces spicy tequila, such as Tanteo Jalapeño Tequila
  • 3/4 ounce freshly squeezed lime juice, plus more for rimming glass
  • black lime salt for rimming glass
  • 3/4 ounce persimmon liqueur, such as Apologue
  • 1/2 ounce black lime simple syrup
  • dehydrated lime wheel, to garnish

Preparation

1.

Roll one side of your rocks glass in lime juice and then in black lime salt (this allows the salt to stick to one side of the glass for a more stylized salt garnish).

Shake the tequila, lime juice, liqueur and simple syrup over ice.

3.

Pour into your rocks glass with fresh ice.

4.

Garnish with a dehydrated lime wheel.
