Vegan No-Bake Peanut Butter & Chocolate Pretzel Bars

This super easy, no-bake recipe has the perfect balance of sweet and salty, plus the tasty combo of creamy peanut butter, dark chocolate, sweet coconut and salty crunchy pretzels! It comes together in no time and is a real crowd pleaser.

 

Technique Tip: Lightly wet your fingertips to spread out the base evenly in the pan.

 

Swap option: Use any nut butter and nut combo instead of peanut, like almonds and almond butter.

 

Ingredients

Bar Base
  • 1 cup salted pretzel crumbs
  • ¾ cup powdered sugar
  • ½ cup coconut oil
  • 1 cup natural chunky peanut butter
Toppings
  • cup 70% dairy free chocolate chips or chunks
  • 2 Tablespoons natural chunky peanut butter
  • ½ cup flaked coconut, lightly toasted
  • ¼ cup roasted peanuts, lightly crushed
  • ½ cup pretzels, lightly broken into large pieces
  • 1/8 tsp pink Himalayan salt for sprinkling

Preparation

To make the base, spray an 8-by 8-inch pan lightly with baking spray or lightly grease with vegetable oil. Line with parchment paper and grease or spray the paper lightly. 

In a large microwave-safe bowl, melt the coconut oil in the microwave. Tip in the crushed pretzels and the powdered sugar. 

Next, stir in the peanut butter and mix until well combined. Pour into the pan and spread it out evenly.  Place in the fridge to chill. 

To make the chocolate topping, in a medium-sized microwave-safe bowl, melt the chocolate and the peanut butter in the microwave. Mix together and microwave again in short increments, mixing well until smooth and creamy.  

Pour about ¾ of the mixture over the chilled base. Sprinkle on the coconut, peanuts, pretzel pieces and salt. Drizzle over the remaining chocolate and chill for at least 2 hours to set firmly.

Once set, cut the bars into squares or triangles and enjoy!
