- 1 pound ground turkey
- 2 tablespoons olive oil
- 1 small onion, diced
- 4 cloves garlic, minced
- 1 egg, lightly beaten
- 1/2 cup panko (or breadcrumbs)
- 1/2 cup milk
- 1 tablespoon tomato paste
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup ketchup
- Cooking spray
Preparation
Preheat oven to 350 degrees F. In a small skillet, heat olive oil over medium-low heat. Add onion and garlic, and sauté for 5-7 minutes, until everything begins to caramelize. Remove from heat. While that's sautéing, combine panko and milk in a bowl and let soak. Once onions and garlic have cooled, combine ground turkey, onion/garlic mixture, panko/milk mixture, egg, tomato paste and seasonings in a large bowl with a spoon or your hands. Spray a bread pan (I like the disposable kind) with cooking spray, and then place meatloaf into pan. Cook for one hour.
