Ingredients

main ingredients:
  • 1/2 cup uncooked rice
  • 1 cup water
  • 1 pound solid white tuna
  • 1 cup tomatoes, diced
  • 1/2 cup pitted calamata olives
  • 1 tablespoon capers
To prepare lemon dressing:
  • 1/2 cup uncooked rice
  • 1 cup water
  • 1 pound solid white tuna
  • 1 cup tomatoes, diced
  • 1/2 cup pitted calamata olives
  • 1 tablespoon capers
  • 3/4 cup olive oil
  • 1/4 cup sherry wine vinegar
  • 1/2 bunch parsley, chopped

Preparation

Baking Directions:

To prepare tuna and rice:Bring water to a boil, add rice and simmer for 12-15 minutes until the water is absorbed.

Spread rice on sheet pan to cool.

In a bowl, add rice, tuna, tomatoes, olives and capers.

Add 3/4 prepared dressing (see below), toss well and season to taste with salt and pepper.

To prepare lemon dressing: In medium-sized bowl, add oil, vinegar, lemon juice, parsley, and blend together slowly with a hand whip.

Season to taste with salt and pepper.

To assemble: In a serving bowl, place a layer of Mesclun greens, add tuna rice mixture and lightly drizzle with lemon dressing.
