If you’re eating a diet low in carbohydrates, pizza might be the first dish you rule out. Luckily you don’t have to after all, thanks to this cauliflower pizza crust. While yes, cauliflower crust will never have the same chewy texture and bready flavor of traditional crust made with flour, it's a great sturdy substitute for sauce and cheese. Nowadays, it’s fairly easy to find cauliflower crust at the grocery store or even your local pizza place, but it’s also remarkably simple to make from-scratch. This recipe calls for just four ingredients — cauliflower rice, grated cheese, eggs and salt — and takes less than 30 minutes to prepare before adding toppings. With no waiting around for dough to rise, this cauliflower pizza crust might just even make a carb-lover into a convert, especially on a busy weeknight!

It’s best to use fresh cauliflower rice, rather than frozen, to make this crust. This is because when frozen cauliflower rice thaws, it can emit too much moisture, which will prevent the crust from crisping and browning. Combine the fresh cauliflower rice with grated Parmesan or pecorino cheese, 2 large eggs and a bit of salt in a large bowl before spreading the mixture out into one large and a few individual crusts on a sheet pan and baking.

After 20 minutes in the oven, the crust is ready for your favorite toppings. Pizza sauce and shredded mozzarella are classic but only the start. Pesto, crumbled sausage, sautéed mushrooms and onions, roasted eggplant and of course, pepperoni are just a few of many toppings to try.

Cauliflower Crust
  • 5 cups cauliflower rice or two 10-oz bags of riced cauliflower, excess water removed
  • 2 large eggs
  • 1/2 cup grated pecorino or Parmesan cheese
  • 1/2 teaspoon kosher salt

Preparation

Preheat oven to 400 F.

Line a baking sheet with parchment paper.

In a bowl, mix together cauliflower rice, eggs, cheese and salt. Transfer crust to the center of parchment paper and press into desired shape. Bake for 20 minutes.

 Remove crust from oven, add desired toppings and bake for an additional 10 minutes.
