Make sure you have the following equipment on hand: cutting board; blender; frying pan; perforated spoon.
To make the fried green plantains:Heat the oil in a large skillet.
Place the plantains in the oil and fry on both sides, approximately 3.5 minutes per side.
Remove the plantains from the pan and flatten them by placing a plate over the fried plantains and pressing down.
Return plantains to the hot oil and fry 1 minute on each side.
Salt to taste and serve immediately.
To make the cilantro sauce:Place all ingredients in a blender and blend until consistency is smooth.
