Tomato, Mozzarella and Avocado Salad

This simple salad is greater than the sum of its simple parts. It only has five ingredients, but they come together to create a colorful, flavorful and all-around fantastic dish.

Ingredients

    • 3 to 4 plum tomatoes, de-pulped and diced
    • 1 to 2 avocados, diced
    • 1 cup diced fresh mozzarella cheese
    • 1/4 to 1/2 red onion, diced
    • Salt and freshly ground black pepper
    • Grated Parmesan cheese, to serve

Preparation

In a serving bowl, toss the tomatoes, avocado, mozzarella and red onion to combine.

Season with salt and pepper to taste. Sprinkle Parmesan cheese over the top and serve.

Optional: Dress with your favorite zesty vinaigrette.
