Three Tone Power Slaw

Ingredients

  • ½ red cabbage shredded fine
  • ½ green cabbage shredded fine
  • 1 large carrot peeled and grated
  • 2 teaspoons kosher salt
  • ½ cup mayo
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon celery seed
  • 1 tablespoon stone ground mustard
  • 2 teaspoons sugar
  • 1 tablespoon sriracha
  • Ground black pepper

Preparation

Mix cabbage and carrots with salt and place in colander and let drain for 1 hour to release excess water.  Squeeze out moisture using a cheese cloth.

Whisk remaining ingredients in a bowl.  Mix together dressing and veggies and season with salt and peppers to taste. Best when slaw has at least 1 hour to marry the flavors.
