Ingredients
- 20 ounce package extra lean (99%) ground turkey breast
- 1 tablespoon minced garlic
- 2 tablespoon minced ginger
- 1 tablespoon cumin
- 1 tablespoon chili powder
- 1/2 teaspoon red hot pepper flakes
- 1 cup chopped green onions
- 2 cup shredded carrots
- 2 cup red bell peppers, chopped
- 1/3 cup soy sauce, reduced-sodium
- 1 cup - 28 oz can crushed tomatoes
- 1 cup - 15 1/2 oz can black beans, drained & rinsed
- 3 tablespoon peanut butter
- 1 bunch fresh cilantro, chopped
Preparation
Baking Directions:
In a large 4-6 quart size pot, cook turkey, garlic and ginger until turkey is no longer pink, stirring constantly to break up turkey.
Once fully cooked, drain the liquid.
Stir in cumin, chili powder and red pepper flakes.
Then, add the remaining ingredients (except peanut butter and cilantro).
Mix well and bring to a boil over high heat.
Reduce to a simmer, cover and cook for 20 -30 minutes until vegetables are tender.
Now, stir in peanut butter and cilantro.
Spoon into bowls and serve hot.
