Texas Pecan Candy

In Texas, we love our pecans. It's actually the official state nut! Even the pecan pie can trace its origins back to the Lone Star State. I'm bringing you all of that sweet buttery goodness, but in a candy form. This pecan candy is a perfect treat for the busy holiday season because it's fast and easy. In my family, Christmas is a big deal. My aunt and mom rotate hosting our entire family, which is almost 50 people! So for me, a holiday treat that's easy to make and goes a long way is always a win-win!

Ingredients

  • 1 (12-ounce) can evaporated milk
  • 1/2 cup light brown sugar
  • 1 cup granulated sugar
  • 1 stick butter
  • cups pecan halves
  • 1 teaspoon orange zest
  • 1/4 teaspoon vanilla extract

Preparation

In a pot, combine the milk, brown sugar and granulated sugar. Stir and bring to a boil then reduce to medium-high. The candy mixture needs to come up to 235 F degrees with a candy thermometer in order for it to harden, so keep a thermometer handy.

Once the mixture comes to temperature, add in the pecans and stir for 2 minutes until well coated.

Add the butter. It will loosen candy mixture a bit but don't worry, just keep stirring until everything is incorporated.

Remove pan from the heat and add in the orange zest and vanilla extract.

Stir the ingredients well and let the candy cool for 3 minutes.

Spoon about 1 tablespoon of the mixture unto a greased cookie sheet. You want to move fast at this step as candy will harden once cold. If you need a bit more time, simply rewarm on the stove and continue.

Allow to sit for a few minutes and the candy will firm up.
