Chef notes

This is my mother-in-law's recipe — it's a family favorite. Its cheesy goodness combined with the bacon and onion makes it the ultimate comfort food for any cold winter day!

Technique tip: Make ahead to quickly bake or even microwave to have ready in minutes.

Swap option: Swap cheddar or any of your favorite cheeses for the Swiss.

Ingredients

  • 1 (8-ounce) block cream cheese
  • 1 cup mayonnaise
  • 8 ounces shredded Swiss cheese
  • 1 teaspoon kosher salt
  • 2 whole scallions, sliced
  • 8-10 strips crispy bacon, crumbled into bits
  • 1 box of your favorite crackers

Preparation

1.

Preheat your oven to 425 F.

2.

In a medium-sized mixing bowl, combine the cream cheese, mayonnaise, shredded Swiss cheese and kosher salt.

3.

Place the cheese mixture into an oven-safe oval baking dish and bake for 10 to 12 minutes or until the cheese mixture is soft and melted.

4.

Once the cheese has melted, increase your oven temperature to broil and place under the broiler for roughly 3 to 4 minutes or until the top begins to brown. Remove from the oven and top with sliced scallions and crispy bacon bits. Serve with your favorite crackers (I like rice crackers for this).
