Ingredients

  • 3 pounds sweet potato, peeled and cut into medium wedges
  • 1/4 cup olive oil
  • 1 tablespoon kosher salt
  • Black pepper, to taste

    Who wants plain, boring, regular potatoes anymore? When I'm serving up a hearty meal, I always go with a big, thick-cut sweet potato fry, not only because they taste awesome (especially with a steak), but they're sweet without causing big spike in blood sugar. Plus, they're packed with healthy vitamins, minerals and fiber.

     

    Preparation

    Preheat oven to 425°F.

    Toss all the ingredients together well, then spread on a nonstick baking sheet and bake for 20 minutes.

    Reduce temperature to 300°F and continue to cook for 10 minutes. 

    Finish sweet potatoes by broiling on high to caramelize the sugars (keep an eye on them to be sure they don't burn). 

    Remove the sweet potatoes from the oven and crack black pepper over them before serving.
