- 1 cup oats
- 1 cup cottage cheese
- 2 eggs
- 1/2 cup leftover sweet potato casserole
- Splash of milk
- Warm maple syrup, for serving
1. Put the oats, cottage cheese, eggs, sweet potatoes, and a splash of milk in a blender and blend until smooth.
2. Spray the griddle with nonstick cooking spray. Pour the batter from the blender onto the griddle to make your desired size of pancakes. Cook until bubbles start to form on the surface of the pancakes about 1 to 1 1/2 minutes. Flip and cook for 1 minute more. Serve with warm maple syrup.
