I love enjoying this simple salad alongside rich proteins like salmon, roast chicken or steak. It adds a crisp freshness and helps balance the heartiness of the proteins.

Technique tip: If you don't like the bite of raw red onions; after slicing, soak them in salted water for about 10 minutes, then rinse off and pat dry.

Swap option: This is great with any lettuce variety you like.


  • 1 container spring mix lettuce
  • 1/4 cup thinly sliced red onion
  • 1 teaspoon fresh lemon juice
  • Kosher salt and fresh black pepper
  • 2 tablespoons olive oil


In a large bowl toss the lettuce, onion, and lemon juice. Sprinkle lightly with salt and a few grinds of black pepper. Rest for a few minutes, the drizzle over olive oil, toss again.
