Ingredients

  • 1 yellow zucchini, sliced length wise, trimmed to 3 1/2 inches
  • 1 green zucchini, sliced length wise, trimmed to 3 1/2 inches
  • 1 japanese eggplant, sliced length wise, trimmed to 3 1/2 inches
  • 1 tomato, peeled and sliced away from the seeded core
  • 1 garlic clove, peeled and sliced thin
  • 1 fennel, trimmed and thin sliced
  • 1 onion, thinly sliced

Preparation

Baking Directions:

Cut two 4-inch squares of parchment paper.

Place one square on top of a sheet of foil approximately 11 linches in length.

Brush the parchment with a generous amount of olive oil.

Season all of the vegetables lightly with salt and fresh ground black pepper.

Layer the vegetables over the parchment neatly within the 4-inch square, with 2 to 3 slices of each vegetable.

Place the second sheet of parchment on top and wrap the foil over the top to create an enclosed package.

Grill each package approximately 3 to 4 minutes on each side, then remove from grill.

Allow to set for 2 to 3 minutes, and enjoy.
