For spring, I love simple cocktails that are light and filled with fresh flavors. This drink is super strawberry-forward in all the right ways.

Technique tip: Muddling the strawberries with sugar and lime juice really allows the flavor of the strawberry to shine and infuse the cocktail.

Swap option: This would also be lovely with raspberries if you have those on hand.

Special equipment: Cocktail shaker.

Ingredients

  • 4 strawberries, hulled and sliced, divided
  • 1/2 teaspoon freshly squeezed lime juice
  • 1 teaspoon granulated sugar
  • 2 ounces elderflower liquor
  • 3 ounces rosé wine
  • ice
  • 1 ounce club soda

Preparation

In a martini shaker, muddle the 3 sliced strawberries with the lime and sugar until broken down.

Add in the elderflower liquor, rosé and ice, and shake vigorously for about a minute.

Strain into a wine glass filled with ice and top with club soda. Garnish with remaining sliced strawberry.
