Strawberry crepes

  • 2 ounce cream cheese, softened
  • 1/2 cup (4 ounces) sour cream
  • 2 tablespoon packed brown sugar
  • 1 tablespoon packed brown sugar
  • 1/2 teaspoon grated lemon peel
  • 1/4 teaspoon vanilla extract
  • 3 cup fresh strawberries, sliced
  • Preparation

    Baking Directions:

    Wrap the crepes in plastic wrap and microwave on high power for 1 minute.

    In a medium bowl, with an electric mixer on medium speed, beat the cream cheese, sour cream, 2 tablespoons of the brown sugar, lemon peel, and vanilla extract until well-blended.

    Evenly divide the cream cheese mixture among the crepes.

    Evenly divide 2 cups of the strawberries over the cheese mixture.

    Fold each crepe in half, then in half again.

    Arrange on a serving plate.

    In a food processor or blender, puree 3/4 cup of the remaining strawberries with the remaining 1 tablespoon brown sugar.

    Fold in the remaining 1/4 cup strawberries.

    Drizzle the strawberry sauce over the crepes.
