Spiced Popcorn Granola

This sensational snack combines all the nutty, spiced goodness of granola with the satisfying crunch of popcorn. The best part is, it's filled with healthy ingredients so you don't have to feel guilty for grabbing a second handful.

Ingredients

  • 1 tablespoon cinnamon or pumpkin spice
  • 1/4 cup coconut sugar or brown sugar
  • 3/4 cup pure maple syrup
  • 1/4 cup avocado oil
  • 6 cups air-popped popcorn
  • 1 cup raw cashews, halved
  • 1 cup sliced almonds
  • 1 cup pecans halves
  • 1 cup raw pumpkin seeds
  • 1/2 cup gluten free oats or unsweetened coconut flakes
  • flaky salt, to finish

Preparation

Preheat oven to 300 F.

In a small bowl, mix together the cinnamon, coconut sugar, maple syrup and avocado oil in a large bowl.

Add the remaining ingredients, except for the flake salt, to the bowl and toss to ensure that every ingredient is coated.

Spread the mixture onto baking tray lined with parchment paper. Make sure it is evenly spread out.

Bake for 35-45 minutes, carefully stirring and mixing the ingredients every 10-12 minutes, until golden-brown.

Remove from the oven and immediately sprinkle with a little flake salt (if desired), then let it completely cool and harden. Break it into pieces and add to an airtight container.
