Smothered Okra With Tomatoes and Shrimp

serves 8-10 people Servings


    • 1-1/2 pounds fresh okra
    • 3 medium ripe tomatoes
    • 1 large bag dried shrimp
    • 3 tablespoons olive oil
    • 1/4 cup lemon juice
    • 2/3 cup diced fine white onions
    • 2 cloves garlic, minced
    • 1 teaspoon curry powder
    • 1 teaspoon salt
    • 1 teaspoon paprika
    • 1/2 teaspoon garlic powder
    • 1/4 teaspoon black pepper
    • 1/4 teaspoon cayenne pepper


Baking Directions:

Rinse and soak dried shrimp in 1-1/4 cups water for one hour prior to preparation.  Heat oven to 375F.  Cut okra into thin round slices.  Using 2 inch-baking dish, bake okra, onions, lemon juice, and garlic uncovered in oven for 1/2 hour.  Remove dish from oven and add all remaining ingredients, including water from soaking shrimp.  Mix and return to oven, covered, for one hour.  Serve over hot rice or use as side dish.
