Smoky turkey and bacon sandwich

  • 1 tablespoon flour
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon turkey breast cutlet, 4 ounces
  • 1 tablespoon light mayonnaise
  • 1 teaspoon adobo sauce from chipotles in adobo
  • 2 slice whole wheat bread, toasted
  • 4 slice small leaves romaine lettuce
  • 2 slice 1/4-inch thick slices tomato [2oz]
  • 2 slice bacon, cooked and drained
  • Preparation

    Baking Directions:

    In a shallow bowl, mix flour, salt, pepper and add turkey cutlet.

    Heat a small nonstick skillet sprayed with nonstick cooking spray over medium high heat.

    Tap off excess flour and add turkey to the skillet.

    Cook 3-5 minutes on each side, or until browned and just cooked through.

    Remove from skillet and let cool slightly.

    In a small bowl, mix mayonnaise and adobo sauce and spread on both pieces of the toasted bread.

    Top one piece of bread with lettuce, tomato, bacon and turkey cutlet and finish with the second slice of bread.
