Shiitake madeira sauce

Ingredients

  • 1/2 cup chopped mushrooms (shitake)
  • 2 tablespoon butter
  • 1 tablespoon shallots, finely chopped
  • 1/2 tablespoon flour
  • 1/2 cup madeira wine
  • 1/2 cup beef stock
  • Preparation

    Baking Directions:

    Cook the mushrooms in the butter on medium heat for about 5 minutes.

    Stir in the shallots and cook for a few more minutes.

    Mix in the flour and brown the mixture for several minutes more.

    Add the wine and the beef stock and bring to a boil, stirring frequently.

    Add the herbs, salt (to taste) and black pepper, and simmer for about 10-15 minutes for a nice consistency.
