Chef notes

This recipe just reminds me of family getting together. My grandma makes this, and we eat it as a salad and as a dessert 'cause it's so yummy. The sweet strawberries, tropical pineapple, tangy sour cream and crunchy nuts cover all the flavor and texture bases you want in a great dish.

Ingredients

  • 1 (6-ounce) packet strawberry gelatin mix
  • 1 (8-ounce) carton frozen strawberries with sugar, slightly thawed
  • 2-3 bananas, mashed
  • 1 (8-ounce) can crushed pineapple, drained
  • 1 cup walnuts or pecans
  • 8 ounces sour cream

Preparation

1.

In a large bowl, mix together strawberry gelatin mix, 2 cups of boiling water (half of the required water from packet instructions), strawberries, bananas, pineapples and nuts.

2.

Allow mixture to come to room temperature.

3.

Pour half of the mixture into a large glass container. Refrigerate for at least 15 minutes, until slightly congealed.

4.

Cover the other half of the mixture and refrigerate.

5.

After mixture is slightly chilled, remove from the refrigerator and spread sour cream on top. Let chill 5 minutes.

6.

Pour the remaining strawberry mixture on top of the sour cream.

7.

Refrigerate for at least 2 hours. Serve and enjoy!
