I am very picky about coleslaw. This version is quick and easy, but it's still incredibly satisfying and crunchy. This refreshing salad is creamy and bright and is sure to be one of your family's new favorites by the end of the summer.
- One 16-ounce bag pre-washed tri-color coleslaw mix
- 1/2 cup vinaigrette dressing of choice
- 1/2 cup mayonnaise
- Two 9-ounce packs Brussels sprouts, shredded
In a large mixing bowl, combine dressing and mayo. Mix until thoroughly combined. If you prefer a thinner dressing, and more vinaigrette to the mixture.
Toss in the coleslaw mix and Brussels sprouts, then mix thoroughly until the dressing has covered the greens. Chill for at least 30 minutes before serving. Since this is a mayo-based salad, do not leave it out in the heat for hours.
