Ingredients

Coffee cake
  • 4 cups baking mix
  • cups milk (whole, buttermilk, half-and-half, almond or whatever you have on hand)
  • 2 eggs
  • 2 teaspoons cinnamon
  • 4 tablesppons sugar (white or brown)
  • Topping
  • 8 tablepsoons softened butter
  • cups baking mix
  • cup brown sugar
  • 1 to 2 tablespoons cinnamon

    What’s better than a slice of fresh-from-the-oven coffee cake and a cup of coffee? Nothing! That's why I always make a double batch of this special recipe. The sweet cinnamon topping is my favorite part. To get started, make my easy Homemade Baking Mix. 

    Preparation

    1.

    Preheat oven to 450 F.

    2.

    Mix all cake ingredients together in a baking pan until well combined. You may also mix them in a separate mixing bowl, then transfer to a pan, if you prefer. 

    3.

    Add all topping ingredients to a clean bowl. Prepare the topping by gently kneading the mixture with your hands until well combined. Crumble the sugar mixture in an even layer over the top of the cake batter. 

    4.

    Bake for 25 minutes.

    Let cake cool slightly before cutting and enjoy!
