Salami Sandwich with Marinated Cauliflower

Ingredients

For the cauliflower:
  • 1 head cauliflower
  • 2 tablespoon red onion
  • 1 clove garlic
  • 2 tablespoon golden raisins
  • 1 tablespoon capers
  • 1 teaspoon caraway seed,
  • 1/4 teaspoon pepperoncino
  • 1/2 teaspoon sicilian dried oregano
  • 2 tablespoon parsley,
  • 1 cup extra virgin olive oil
  • 1/3 cup white wine vinegar
  • 1/3 cup Kosher salt
  • 1/3 cup Pepper
For the sandwich:
  • 1 head cauliflower
  • 2 tablespoon red onion
  • 1 clove garlic

  • 1 tablespoon capers

  • 4 hard rolls
  • 24 slice smoked salami
  • 24 slice dried salami
  • 24 slice Dijon mustard
  • 24 slice Baby mustard greens
  • 24 slice Marinated cauliflower

Preparation

Baking Directions:

For the cauliflower:Mix ingredients.

Season to taste with kosher salt and freshly ground black pepper.

Let marinate overnight.

For the sandwich:Split rolls.

Place a generous amount of cauliflower on the bottom.

Spread Dijon mustard on the top of each roll.

Top cauliflower with greens and 6 pieces each of the smoked and dried salami.

Serve.
