Roasted Tomato and Bread Salad Packet

Ingredients

  • 1 bag uette or country bread loaf, cut into small slices
  • 1 bag tomato, peeled and sliced away from the seeded core
  • 1 bag garlic clove, peeled and sliced thin
  • 1 bulb fennel bulb, trimmed and thin sliced
  • 1 bulb lemon

Preparation

Baking Directions:

Cut two 4-inch squares of parchment paper.

Place one square on top of a sheet of foil approximately 11-inches in length.

Brush the parchment with a generous amount of olive oil.

Season all of the items lightly with salt and fresh ground black pepper.

Alternate layers of bread, tomato, garlic, and fennel with a sprinkle of herbs.

Place the second sheet of parchment on top and wrap the foil over top to create an enclosed package.

Grill each package approximately 4 to 5 minutes on each side.

Open the package and toss with arugala and lemon juice.

Season to taste.
