Brussels Sprouts are a wonderfully hearty green vegetable, while chorizo and lime add just the right punch of flavor.
- 3 pounds Brussel sprouts, cut into quarters
- 1/2 pound Spanish chorizo, sliced
- 1 teaspoon kosher salt
- 1/4 cup olive oil, preferably Spanish
- 1 lime
Combine Brussel sprouts, chorizo, salt and olive oil in a large bowl, tossing well. Pour onto a nonstick baking sheet in a single layer (you may need to use more than one sheet).
Broil on high in the oven for 8 minutes total, stirring every 2 minutes for even coloring (keep an eye on the oven because things can burn quickly in the broiler).
Once the Brussels are charred nicely, remove from oven and place in a serving bowl. Zest the lime directly onto the sprouts, then squeeze the juice on as well. Serve immediately.
