Curb your summer ice cream craving — without the mess! This no-mess dessert is perfect for your summer gatherings because it can hold up for hours outside, unlike its frozen friend. Serving rice krispie treats in an ice cream cone makes this treat portable so everyone can enjoy while mingling with a crowd. If you want to make this interactive, add a station with different types of melted chocolates for guests to dip their cone into and add their own fun toppings before choosing an “ice cream” flavor for topping.

Technique Tip: Instead of pressing into a pan, use an ice cream scoop to create rounded mounds of the rice cereal mixture to place on an ice cream cone. Serve on top of a dipped cone for a real sundae bar effect!

Swap Option: Add in your favorite ice cream flavorings such as freeze-dried strawberries, chocolate chips, flavor extracts and other candies.

 

 

Ingredients

For the Rice Krispie Bars
  • 4 tablespoons unsalted butter, melted
  • 1 (10-ounce) bag marshmallows
  • 1 (16-ounce) container marshmallow fluff
For Strawberry-Flavored Variation
  • 1 (1.2-ounce) bag freeze-dried strawberries, ground into a powder, reserving 1/4 cup of whole pieces to fold into cereal-marshmallow mixture
    For Mint Chip-Flavored Variation
    • 1/2 teaspoon mint extract
    • 1/2 cup mini chocolate chips
    • 1-2 drops green food coloring
    To Serve
    • ice cream cones
    • melted chocolate, for dipping
    • sprinkles
    • your favorite candies such as M&Ms, chocolate chips, etc.

    Preparation

    1.

    Spray 3 medium mixing bowls with non-stick cooking spray.

    2.

    In a large pot set over medium-low heat, melt the butter and marshmallows together. Be sure to stir constantly to avoid the mixture from burning.

    3.

    Once melted, add marshmallow fluff, vanilla and salt. Continue stirring until mixture is completely melted.  

    4.

    Add puffed rice cereal and mini marshmallows, and fold to combine. It may take 2 to 3 minutes to completely incorporate everything

    5.

    Divide mixture between 3 mixing bowls, depending on desired variations. To each mixing bowl, add your variation flavorings.

    6.

    Spray a 2½-ounce cookie scoop with non-stick cooking spray. Scoop each krispy mixture into ice cream scoop shapes and place on a parchment lined baking sheet. 

    7.

    To serve: Dip rim of ice cream cone in melted chocolate. Add sprinkles, if desired. Let cone set for at least 10 minutes before topping with desired rice krispy flavor.
