Once you taste this crunchy raw cauliflower salad you'll wonder why you've only been eating it cooked all these years.
Using the Mandolin, carefully shave the cauliflower and the red onion over a large bowl. Add the almonds and parsley, and set aside.
In a small bowl, combine the olive oil, lemon juice, salt, pepper and garlic. Whisk together and pour mixture over the cauliflower. Toss well and mix until colors are well distributed and the mixture is well coated with dressing, and serve.
