Tender pulled pork, crisp lettuce and fragrant rice make this dish anything but a basic burrito bowl. You can take the base idea for the recipe and tweak the ingredients to use up whatever you might have on hand.

Technique tip: Make sure to choose a crunchy lettuce, like romaine. It makes the dish feel super fresh and balances out the richness of the meat.

Swap options: If you want to keep this meal low-carb, swap out the rice for cauliflower rice. It's an easy way to add another veggie.

    • 2 cups cooked jasmine rice, frozen
    • 1/2 cup chopped cilantro
    • 1 lime, juiced
    • 1 cup Greek yogurt
    • 2 tablespoons adobo sauce
    • 1 large heart of romaine lettuce, sliced
    • Shredded pulled pork (recipe linked above)
    • 1/2 cup chopped cilantro
    • 1/2 diced white onion
    • 1/2 cup radish, diced

1. Cook rice in the microwave for 3 minutes, or until heated through. Transfer to a bowl and stir in the cilantro and fresh lime juice. Season with salt and pepper.

2. Combine Greek yogurt and adobo sauce in small bowl, set aside.

3. Divide ingredients amongst 4 bowls. Layer in the romaine lettuce, seasoned jasmine rice and pork.

4. Top with diced onion, radish, more cilantro and a drizzle of the adobo sauce.
