Tender pulled pork, crisp lettuce and fragrant rice make this dish anything but a basic burrito bowl. You can take the base idea for the recipe and tweak the ingredients to use up whatever you might have on hand. 

Technique tip: Make sure to choose a crunchy lettuce, like romaine. It makes the dish feel super fresh and balances out the richness of the meat.

Swap options: If you want to keep this meal low-carb, swap out the rice for cauliflower rice. It's an easy way to add another veggie. 

Ingredients

  • 2 cups cooked frozen jasmine rice
  • 1/2 cup chopped cilantro
  • 1 lime, juiced
  • 1 cup Greek yogurt
  • 2 tablespoon adobo sauce
  • 1 large heart romaine lettuce, sliced
  • 16 ounces shredded pulled pork (recipe linked above)
  • 1/2 cup chopped cilantro
  • 1/2 diced white onion
  • 1/2 cup radish, diced

Preparation

Cook rice in the microwave for 3 minutes, or until heated through. Transfer to a bowl and stir in the cilantro and fresh lime juice. Season with salt and pepper.

Combine Greek yogurt and adobo sauce in small bowl, set aside.

Divide ingredients amongst 4 bowls. Layer in the romaine lettuce, seasoned jasmine rice and pork.

Top with diced onion, radish, more cilantro and a drizzle of the adobo sauce.
