This protein-packed breakfast is a great way to start the day. Make a delicious sugar-free syrup by combining 2 cups of blueberries with ¼ cup of water in a saucepan over medium heat, cooking for about 5 minutes and puréeing in a blender.
Whisk all ingredients together in a small bowl until just combined.
Heat a six-inch nonstick cooking pan over medium heat. Spray with nonstick cooking spray and pour three ounces of batter into the pan.
